Finland Coffee Recipe
The people in Finland have a reputation of being some of the heaviest coffee drinkers in the world.
Kahvi
- 1 egg, well washed
- 3 tbsp. coffee
- 4 cups boiling water
In a medium-sized pot, crush an egg (shell and all) and mix it with the coffee grounds. Add the boiling water water to mixture in pot and bring to a boil. Remove from heat, letting coffee settle for a moment, then return to heat and bring to boiling point again. This process may be repeated a third time, if desired. Cover pot and allow grounds to settle. It is the eggshells that help in clearing the coffee. Serve coffee by pouring it off the top of the pot into glasses or cups, or pour coffee into a copper coffeepot first when serving formally.
